Green coffee from the Northern Sao Paulo State in Brazil, natural process. This coffee comes from a newly established importer with direct ties to coops and farms in Brazil. One of the partners is a Brazilian with an American wife, and the other is an American with a Brazilian wife.
The coffee is a mixture of yellow and red catuai, grown at approximately 1000 meters and naturally sun dried. The drying cherries are manually turned between 8-12 times per day to ensure uniform drying.
Cupping Notes: The defining characteristic of this coffee is its sweetness. At lighter roasts, the sweetness leans more to a fresh fruit, and at darker roasts the dried fruit notes dominate (golden raisin), along with an increasing sense of chocolate. Chocolates and spiced fruit in the aroma, soft acidity and rich, round full body. Excellent as a single origin espresso or as an espresso base. At a recent roaster's retreat, our best success with this bean was a melange blend that combined a full city and full city+ roast.
